Chocolate Covered Peanut Butter Dates
There’s nothing quite like discovering a snack that feels indulgent and is full of goodness too. Recently I’ve been raving to everyone about my latest obsession: chocolate-covered, peanut butter–stuffed dates. They’re rich, chewy, salty-sweet, and satisfy that mid-afternoon or evening craving — all while giving your body some real fuel.

How to Make Them
Take approximately 18 juicy Medjool dates (Zaytoun Palestinian Dates are my faves) and remove the stones.
Fill each date with a spoonful of organic peanut butter.
Melt a bag of Montezuma Dark Chocolate Buttons with a spoon of organic coconut oil.
Drizzle over the dates (or dip them fully for extra indulgence).
Sprinkle a little Himalayan salt over the top.
Pop them in the fridge until set.
You’ll have a tray of delicious, ready-to-grab snacks in less than 15 minutes and with approximately 140 calories per stuffed date makes them similar in calories to a standard chocolate bar snack, but with far better nutrition and energy value.
